Bengali Dal Bori with Radish and Potato Stir Fry with Greens


Let's craft a flavorful Bengali-inspired dish that showcases the unique combination of radish, potatoes, Bengali dal bori (lentil dumplings), and aromatic spices. Introducing the Bengali Dal Bori Radish and Potato Stir Fry with Greens—a dish that marries tradition with a burst of freshness. Recipe credit goes to my mum-in-law, an excellent cook.

Ingredients:

-250g Radish, julienned

- 2 medium Potatoes, matchstick-cut

- 10 Bengali Dal Borii (lentil dumplings), fried golden brown in little oil

- 500g Salad greens or baby spinach

- 1 tsp Bengali Five Spices (Panch Phoran)

- 2-3 Green Chillies, sliced (adjust to your spice preference)

- 1/2 tsp turmeric powder

- Salt to taste

- 2tbsp -Vegetable oil


Instructions:

1. Heat vegetable oil in a pan over medium heat.

2. Add the Bengali Five Spices (Panch Phoran) to the hot oil. Allow them to sizzle and release their aromatic essence.

3. Add the sliced green chillies to the pan and sauté briefly until they infuse their heat.

4. Toss in the julienned radish and matchstick-cut potatoes. Stir well to coat them with the aromatic spices.

5. Add the Bengali Dal Bori to the pan. Let them mingle with the vegetables and spices, adding a unique texture and nuttiness to the dish.

6. Sprinkle turmeric powder over the mixture, and season with salt to taste. Continue to sauté until the radish and potatoes are tender yet retain a slight crunch.

7. Once the vegetables and dal bori are cooked, add the salad greens or baby spinach to the pan. Gently stir until the greens wilt slightly and blend with the rest of the ingredients.

8. Check for seasoning and adjust if needed. Once everything is well combined and cooked to perfection, your Bengali Dal Bori Radish and Potato Stir Fry with Greens is ready to be served.
