Mediterranean Quinoa and Rice Stir Fry

- 2 packs Aldi cooked special whole grain basmati rice with quinoa and seeds
- 1 can cooked chickpeas, drained and rinsed
- 1/2 cup chopped black and green olives
- 2 tbsp chopped sundried tomatoes
- 1 cup chopped red bell pepper
- Mixed Italian herbs (to taste)
- Salt and pepper (to taste)
- 2 tbsp olive oil for stir-frying

Instructions:
1. Heat olive oil in a large pan or wok over medium-high heat.
2. Add chopped red bell pepper and stir-fry for 2-3 minutes until slightly tender.
3. Incorporate the drained chickpeas, olives, and sundried tomatoes, continuing to stir-fry for an additional 2 minutes.
4. Add the Aldi cooked special whole grain basmati rice with quinoa and seeds to the pan, breaking up any clumps and evenly distributing the ingredients.
5. Sprinkle mixed Italian herbs, salt, and pepper over the stir fry, adjusting to your taste preference. Continue to stir-fry for an additional 3-4 minutes.
6. Taste and adjust seasoning if needed.
