Homemade Pesto Pasta with Mushrooms and Sweet Peppers
There's a particular kind of joy in a weeknight dinner that tastes like it took much longer than it did. This pesto pasta with mushrooms and sweet peppers is exactly that: vibrant, herby, a little smoky from the sauteed vegetables, and ready in well under 30 minutes if your pesto is already made - or about 45 if you're blending it fresh. Make good use of the abundance of basil leaves from your windowsill pot or herb garden!
Why This Combination Works
Classic basil pesto is bright, garlicky, and rich with good olive oil and
parmesan. On its own, tossed with pasta, it's already a beautiful dish. But add
earthy sauteed mushrooms and sweet, slightly caramelized bell peppers, and you
get contrast: the pesto's freshness against the mushrooms' umami depth and the
peppers' natural sweetness. It's a one-pan sautee plus a food processor pulse,
and that's really all the technical difficulty involved.
Ingredients
For the pesto (makes about 1 cup):
- 2 cups fresh basil leaves, packed
- 1/3 cup pine nuts (walnuts work too)
- 2 cloves garlic
- 1/2 cup grated parmesan
- 1/2 cup extra-virgin olive oil
- Salt and pepper to taste
For the pasta:
- 350g pasta (fusilli or penne hold the sauce well)
- 250g cremini or button mushrooms, sliced
- 3 red or yellow sweet peppers, diced
- 2 tablespoons olive oil
- 1 small shallot or 2 cloves garlic, minced
- Mixed Italian Herbs
- Red pepper flakes (optional)
- Extra parmesan and basil leaves, for serving
1. Make the pesto. In a food processor, pulse the basil, pine nuts, and garlic
until finely chopped. Add the parmesan, then slowly stream in the olive oil
while pulsing, until you get a loose, spoonable paste. If using a Magic or Nutri Bullet, whizz all ingredients together until you get a fine paste. Season with salt and
pepper. Set aside.
2. Cook the pasta. Bring a large pot of salted water to a boil and cook the
pasta until al dente. Reserve about a cup of pasta water before draining.
3. Sautee the vegetables. While the pasta cooks, heat olive oil in a large
skillet over medium-high heat. Add the mushrooms in a single layer and let them
sit for a couple of minutes before stirring, so they brown rather than steam.
Once golden, add the sliced peppers and shallot or garlic. Cook another 4 to 5
minutes, until the peppers soften and pick up a little color at the edges.
Season with salt, pepper, mixed herbs, and red pepper flakes if using.
4. Bring it together. Add the drained pasta directly to the skillet with
the vegetables. Spoon in the pesto and toss well, adding splashes of reserved
pasta water until the sauce loosens and coats everything evenly.
5. Serve. Plate immediately, topped with extra parmesan, toasted pine nuts, and a few torn
basil leaves.
A Few Notes
- Make-ahead pesto: Pesto keeps well in the fridge for about a week if you
press plastic wrap directly onto its surface (this prevents browning), or
freeze it in ice cube trays for months.
- Swap the nuts: Walnuts or even pistachios make a fine substitute for pine
nuts, and are often cheaper.
- Add protein: Grilled chicken, white beans, or a fried egg on top all work
nicely if you want to round this out into a heartier meal.
- Vegetable variations: Courgettes, cherry tomatoes, or asparagus are easy
additions if you want to use up what's in the fridge.
This is the kind of recipe that rewards a little improvisation, and once you've
got the pesto down, the vegetable pairing is really just a matter of what looks
good at the market that week.
