Spinach, Ham and Cheese Omelette

 Ingredients:

- 2 large free-range eggs
- 1 slice of honey roast ham
- 100g baby spinach
- 2 tbsp grated cheddar cheese
- 1 tsp chopped fresh or dried chives
- Salt, to taste
- Pepper, to taste
- Olive oil

Instructions:

1. Prepare the Spinach:
   - Wash the baby spinach thoroughly and set it aside.

2. Preparation:
   - Crack the eggs into a bowl, add salt, pepper, and chopped chives, whisk until well combined.
   - Heat a non-stick frying pan over medium heat and add a splash of olive oil.

3. Assembling:
   - Pour the whisked egg mixture into the heated pan, spreading it evenly.
   - Lay the slice of honey roast ham on one half of the omelette in the pan.
   - Layer the baby spinach leaves evenly over the ham.
   - Sprinkle, grated cheddar cheese over the spinach layer.

4. Folding and Finishing:
   - Once the omelette begins to set, gently fold the other half of the omelette over the layered side, creating a half-moon shape.
   - Cook for an additional 1-2 minutes until the cheese melts completely and the omelette is cooked to your desired doneness.
