Ingredients:
- 6 eggs
- 1/2 sweetheart cabbage, thinly sliced
- 1/2 bell pepper, diced (red)
- Chorizo slices
- Pepper, to taste
- 3 shoots spring onions, chopped
- 2 tbsp chives, chopped
- 1/2 tsp mixed herbs
- Salt, to taste
- 1/2 cup grated cheddar cheese
- 1/2 cup frozen petit pois

Instructions:

1. Preheat your oven to 350°F (180°C).

2. Sauté chorizo slices in a large ovenproof skillet until slightly crispy.

3. Add sliced sweetheart cabbage and diced bell pepper to the skillet; cook until vegetables are softened.

4. Whisk eggs in a bowl, season with pepper, mixed herbs, and salt. Pour over vegetables and chorizo.

5. Sprinkle chopped spring onions, chives, and frozen petit pois evenly over the egg mixture.

6. Cook on the stovetop until the edges start to set.

7. Sprinkle grated cheddar cheese on top.

8. Transfer the skillet to the preheated oven; bake for 15-20 minutes or until the eggs are set.

9. Remove from the oven; let it cool for a few minutes.
