Ingredients:
- 5 eggs
- 1 red bell pepper, diced
- 2 leaves of cavolo nero (kale), chopped
- 5 large chestnut mushrooms, halved and sliced
- Grated cheddar cheese (as much as you like)
- Salt, to taste
- Pepper, to taste
- Chilli flakes, to taste
- Mixed Italian herbs, to taste
- Olive oil
Instructions:
1. Preheat your oven to 350°F (180°C).
2. In a bowl, crack the eggs and whisk them together until well beaten. Season with salt, pepper, chilli flakes, and mixed Italian herbs. Set aside.
3. Heat olive oil in a non-stick oven-safe skillet over medium heat.
4. Add the diced red bell pepper and sauté for a few minutes until it starts to soften.
5. Add the sliced mushrooms to the skillet and cook until they are golden brown and any liquid has evaporated.
6. Toss in the chopped cavolo nero and cook until it wilts.
7. Pour the whisked eggs over the vegetables in the skillet. Allow the eggs to set at the edges.
8. Sprinkle the grated cheddar cheese evenly over the top of the frittata.
9. Transfer the skillet to the preheated oven and bake for about 12-15 minutes, or until the frittata is set in the middle and the top is golden brown.
10. Once done, remove from the oven and let it cool for a few minutes.
11. Slice the frittata into wedges and serve warm. You can garnish with additional herbs and cheese if desired.
